Chefs need their growers…
It was a joy to see the authenticity of the chefs behind Australia’s top restaurants when they spoke of their relationships with their growers and their pride in being part of the global wave championing the farmer and encouraging communities support local growers.
Peter Gilmore :”It is so incredibly rewarding and enriching for the menu when you source local produce!”
He said at Quay they aimed to inspire people and make them aware of the diversity offered by local growers, as opposed to supermarkets concerned with vegetables “for their appearance and shelf life”.
(it’s love and I haven’t ever eaten the food :)) )
Mike’s favourite interstate chef Matt Wilkinson was on form too:
“Grandad used to garden for necessity rather than love,” he said ….. now role models like Nigel Slater and Hugh Fearnley Whittington are “going back to grass roots and championing the farmer ”
